1 c. Butter, softened
1 1/2 c. Sugar
1/4 c. Brown sugar, packed
2 1/2 c. Peeled, cooked and mashed sweet potatoes
4 eggs
1 T vanilla
3 c. Flour
2 t baking powder
1 t baking soda
1 t salt
1 1/2 t cinnamon
1/4 t nutmeg
1/4 t mace
Beat butter and sugar till fluffy, add potatoes and beat thoroughly. Add one egg at a time, beating after each addition;stir in vanilla. Whisk together remaining ingredients. Gradually add to butter mixture, beating at low speed until blended. Pout into greased and floured 10 inch tube pan.
Bake at 350 degrees for one hour or until done. Serves 10 – 12.
